Hey, there! I'm excited to finally make this chickpea pancake recipe! Question -- if we're making in a double batch, can I just pour the batter into pancake shapes on a sheet pan and bake them off?

Okay, really into this chickpea pancake situation. It's inspiring to see what you're cooking in random one-serving meals too, because my husband is about to go out of town and I'm going to try my best to resist the siren-song of takeout in favor of cooking from my own pantry/freezer. Also hell yes to eternal produce. I have definitely had cabbages that are pushing the six week mark and appear to have drunk from the holy grail?
